I am super excited to share with a ridiculously easy recipe to make the CUTEST little rainbow meringue kisses.

You will need…

  • 250g Caster Sugar

  • 4 Egg Whites

  • Gel Food Colouring (selection of colours)

  • Sprinkles of your choice

  • Piping bag (disposable recommended) fitted with a round nozzle

  • Tray lined with parchment paper or a silicone oven safe mat

  • Paintbrush, stand mixer or handheld electric whisk, silicone or rubber spatula

  • An Oven



  1. Preheat your oven to 120c and measure out your ingredients

  2. Pour sugar onto a baking sheet and pop in the oven for 3 minutes until the sugar is warm to touch, it should have just started to brown on the edges

  3. Start to whisk your egg whites in a metal or glass bowl (wipe with lemon juice or vinegar before so its squeaky clean or your meringue won’t whip up properly) the whisking should take around 5 minutes

  4. Pour your sugar slowly into the egg whites and continue to mix for around 10 minutes or until you can not longer feel any sugar granolas between your fingers

  5. Fold down the top of your piping bag to half way and pop a nozzle in. Carefully paint with gel food colouring lines from the nozzle to your fold line. Gel food colouring is very pigmented, so feel free to dilute with a little vodka/ rose water if you would like a lighter shade

  6. Fill your piping bag with the meringue mix and give the bag a shake to ensure you have no air bubbles in the bag

  7. Twist the top of the piping bag to secure and push the mixture to the end of the nozzle

  8. Line your baking tray with parchment (pipe a little meringue in every corner to secure in place) alternatively you can use a silicone non slip mat

  9. Pipe your kisses holding the piping bag exactly vertical to the tray, a squeeze, little push down and lift will give you the ‘kiss’ effect (don’t worry have a practice before)

  10. Pop some sprinkles on top if you like and pop in the oven for 30 minutes. You may want to keep the oven door ajar slightly to stop humidity

These are delicious on their own and make gorgeous little gifts! You’re guaranteed the WOW factor if you top your cupcakes or celebration cakes with these beauties!
